INGREDIENTS
Fritters:
3/4 Cup Almond Meal
1/4 Cup Coconut Flour
2 Tablespoon Shredded Coconut
2 Teaspoons baking powder
1/2 Teaspoon salt
1 Teaspoon cinnamon (try grinding your own cinnamon stick)
1/2Teaspoon ground nutmeg
8 Tablespoons Nana's Garden Ice Tea (can use apple juice)
3 Egg, room temperature
200 grams of Apple, peeled and chopped
200 grams Coconut Oil for frying
Glaze:
2 Tablespoons of Honey
2 Tablespoons Nana's Garden Ice Tea (can use apple juice)
1/2 Teaspoon cinnamon
1/4 Teaspoon nutmeg
Garnish:
2 Kiwi Fruit ( quartered and chopped)
1 Punnet of Blueberries
Teaspoon Cocoa
Chocolate Ganash Side:
1/4 Cup of Cocoa Powder
2 Teaspoons of fine ground Coffee Beans
1 Tablespoons Honey (can use Agave syrup)
2 Avocado (flesh removed into bowl)
METHOD
In a large bowl, combine the dry ingredients and set aside.
In a medium or large pot, preferably with high sides to minimize mess, pour enough
oil so that there's about an inch covering the bottom. If you have a thermometer, use it!
Heat oven to 180°C
Meanwhile, peel and chop the apples medium fine.
When the pot oil reaches 180°C, and not before, add the apple juice and egg to the dry
mix.
Stir until combined and then fold in the apples. Gently goes with this process.
FRITTERS
Take 2 tablespoons of the mixture and flattened slightly in the palm of my hand. Use a
pastry scraper to get the sticky fritter batter off your hand and gently place in the hot
oil.
Fit as many as you can in the pot without overcrowding them (not to be touching). Fry
one side for one minute, and then flip over and fry for another minute (total 2 minutes).
After two minutes, use a slotted spoon to remove the fritters from the oil and place
on a paper towel lined plate.
Check oil temperature is still around 180°C and then fry the remaining fritters.
While the fritters are cooling, prepare the glaze by mixing all the glaze ingredients
in a medium sized bowl (big enough to dip the donuts in).
GANASH
Place all ingredients in food processor and blend until the ganash is smooth and
ingredients mixed thoroughly.
GLAZE
Once the donuts are completely cool, dip in the glaze covering both sides.
Place fritters on a cooling rack and refrigerate until the glaze hardens, about 15
minutes. Eat straight away for best results and flavors.
Plate up Nana's Apple Fritters, garnish with kiwi fruit, blueberries and place a small
spoon of chocolate ganash on the side.
