INGREDIENTS

1/2 Cup Cashews

3 Carrots (peeled and chopped into matchsticks)

1/2 Yellow capsicum (diced)

1/2 Red capsicum (diced)

2 Tomatoes (diced)

1 Small red onion (finely diced)

1 Celery stalk (finely chopped)

2 Boiled eggs (quartered)

Salt and Pepper

1 Cucumber (diced)


METHOD

Chop all ingredients and place in a large bowl.  Salt and pepper to taste and toss salad.

Serve with protein source of your choice - my choice was Coconut Oil Fried Chicken Thigh
