Creamy Cauliflower & Broccoli
INGREDIENTS
2 Bunches of Broccoli (sectioned)
1 Cauliflower (sectioned)
1 Can of Coconut Milk (no additives coconut and water only)
2 tablespoons of Lamyong's Mushroom seasoning
Salt and Pepper to taste
1 teaspoon of ghee or clarified butter
1/2 Cup of water
1/2 Cup of shredded coconut
METHOD
Microwave broccoli and cauliflower for 5 minutes with ghee or clarified butter and 1/2 cup of water. Place broccoli and cauliflower in a baking dish. Sprinkle with mushroom seasoning, salt and pepper. Pour over coconut milk and sprinkle shredded coconut. Cook in a 200 degree Celsius oven for 20 minutes (or until browned)
