Deconstructed Asian Vegetable & Mushroom Omelette
INGREDIENTS
1 Bunch Choy Sum (chopped roughly)
1 Bunch Pak Choy (chopped roughly)
1 Shallot (chopped)
1 Cup of Chicken Mince
1 Desert Spoon of Lambyong's Mushroom Seasoning
1/2 Teaspoon of Red Chilli (seeds in or out according to preference)
Salt & Pepper to taste
5 Eggs
2 Garlic Cloves (finely diced)
1 Teaspoon Coconut oil
METHOD
Beat eggs in a bowl and set aside. Heat a frying pan with a teaspoon of coconut oil. Lightly fry garlic and chicken mince until golden. Add shallots, chilli and Asian green vegetables to the pan and cook until vegetables are softened. Pour eggs into pan and stir through. When well combined serve. Serves 4 people
