FRESH BEETROOT WITH SWEET POTATO CARROT BAKE
INGREDIENTS
4 Large Fresh Beetroots
1/4 cup Vinegar
1 Tablespoon Honey
4 L Water
3 Sweet Potatoes
3 Carrots
1 Large onion (quartered)
2 Garlic Cloves
1 Desert spoon Coconut Oil
METHOD
Bring water to boil in a large saucepan. Add vinegar and honey to the water. Peel beetroot and chop into large chunks. Place beetroot in the saucepan and boil until tender.
Preheat oven at 200 degree Celsius. Wash sweet potato and carrots. Chop sweet potato and carrots into quarters. Peel onion and quarter. Squash and peel garlic. Place coconut oil, sweet potato, carrot, onion and garlic in a baking dish and bake in a hot oven until golden and soft.
