Protein Packed Muffin

Ingredients

1 Small Capsicum (diced)

1 Chopped Shallot

2 Cups of cooked and mashed Sweet Potato

1/2 Cup of Cashews

1 Cup of bacon (sulphate free)

1/2 Cup diced Asian Chives

7 Eggs

Salt & Pepper

1 Desert spoon of Lamyong's Mushroom Seasoning

2 Desert spoons of Coconut Flour

3 Garlic Cloves (crushed and finely diced)

1 Cup of Mushrooms (diced)

Method

Preheat oven at 200 degrees Celsius.  Toast off Cashews in a hot pan and place in a bowl to cool.  Brown bacon in a hot pan and set aside to cool.  Combine all ingredients in a large bowl.  Grease a 12 Muffin pan and spoon the mixture into each muffin slot evenly. Cook until golden brown and cooked through.
