Shallow Fry Sweet Potato Gnocchi
INGREDIENTS
200 grams cooked sweet potato (approximately 4 small sweet potato)
1 cup almond meal
1 cup coconut flour
1/2 teaspoon salt
1/2 teaspoon cinnamon
1 egg
METHOD
Preheat oven at 200 degrees celsius. Place sweet potato (skin on) in a baking dish and cook in oven until tender. Remove from oven and set aside to cool.
When sweet potato is cool turn out onto a coconut floured bench.
In a separate bowl, combine almond meal, coconut flour, salt and cinnamon.
Make a well in the middle of the sweet potato and crack the egg into the well. Gently mix egg through the sweet potato.
Sprinkle 1/4 flour mixture over sweet potato and knead through. Continue adding flour mixture until all is combined with sweet potato.
Knead and roll mixture into long log.
Chop gnocchi into 2cm squares and press a fork into each.
In a non stick pan, heat coconut oil. When oil is hot, add gnocchi ensuring space between each. Cook until golden brown on each side and then remove and drain on paper towel.
