YONI'S KUMERA SMASH
INGREDIENTS
3 Large Kumera (golden sweet potato)
Salt and Pepper
1 Medium Shallot Onion (finely diced)
1/4 Cup Chives (chopped thinly)
2 Shallots (chopped thinly)
1/2 Cup of chopped fresh coriander
15 Almonds (roughly chopped)
1 Tablespoon Sesame Oil
1 Garlic Clove (crushed and diced finely)
METHOD
Peel Kumera and chop in large pieces. Place in a large saucepan of boiling, salted water and boil until soft. Drain and return to saucepan.
On a large chopping board place sesame oil, garlic and onion. Mix well then add salt and pepper, chives, shallots and chopped almonds. Mix all ingredients together. Turn out cooked Kumera onto the large chopping board and work all ingredients together until evenly distributed. Serve with your favorite protein dish or eat on its own with a fresh green salad.
