Zucchini Chicken and Cumin Omelette

Ingredients

1 Crushed and finely diced garlic clove

1 tsp of Cumin Powder

1 Zucchini finely sliced into matchsticks

1 small onion

1/2 Cup of Chicken (cooked and diced)

Splash of Sesame Oil

2 Eggs (beaten)

Method

Lightly fry garlic and onion in sesame oil until onion is translucent.  Add cumin powder and fry off.  Add Chicken and combine well with garlic and onion.  Finally add finely sliced zucchini and stir through.  Salt and pepper to taste.  Pour egg mixture over chicken and turn down heat.  When the bottom is cooked, removed from stove and finish off under the grill.
